You have Falcon 4? How long have you had it and what do you think of it? Apart from a few bugs in F4 it's a cool sim. I know what you mean about the gains and this is noticable when you see a real F-16 docking with the boom. I think F4 does have this, though I am not 100% sure. I will have to check about the door.

I tried air refueling in Falcon 4.0. It is possible, but actually a little harder than the real jet. The reason is that in the real jet you go into takeoff & landing gains as soon as you open the air refuel door. This makes the jet easier to control when air refueling. Can you open the air refuel door in Falcon4.0 ?
